These little potato cakes are an epic use for leftover mashed potatoes. The variations are infinite — chop up almost any leftover veggies and fold them in. You can even cut a square of cheese and stuff it in the middle, for an Ecuadorian llapingacho. When I make these for kids, especially in schools, they go crazy for them. You may be surprised how little binder you need. With a portion scoop you can pop them right into a hot skillet and they will set beautifully. Don’t get too caught up in amounts. Just eyeball it, and make a tester to taste for seasoning and texture and adjust accordingly.

And good luck, as you may need to oversee some arguments over who gets the last one. ;)
